Hi everyone, hope you are enjoying this beautiful day and doing wonderful things.  So who loves birthday cake, vanilla cake with vanilla buttercream and lots of fun sprinkles?  It really brings out the kids in us huh. Now imagine that but in a cookie form, a sugar cookie base loaded with sprinkles and mini white chocolate chips.  Well that’s what I got for you today my Funfetti (Birthday Cake) Cookies; its cake in cookie form.  A nice soft sugar cookie just melts in your mouth and so easy to do kids will love this one.

It’s a simple recipe so let’s get right to it.

Funfetti (Birthday Cake) Cookies

Ingredients

  • 1 cup of unsalted butter at room temp.
  • 1 cup of granulated sugar
  • 1 egg at room temp.
  • 2 tsp of vanilla extract
  • 1 tsp of salt
  • 1 tsp of baking powder
  • 2 cups of All Purpose flour
  • 1 cup of sprinkles
  • ¾ cup of mini white chocolate chips (optional)

Instructions

  • Sift flour, baking powder and salt into a bowl and set aside.
  • Cream together butter and sugar for 5 mins.
  • Add in your egg and vanilla and mix again.
  • Slowly add in your flour mixture and mix just until almost combined,
  • Finally gently fold in your sprinkles and white chocolate (if using).
  • Wrap dough in plastic wrap and chill for about 20-30 mins.
  • While dough is in fridge preheat your oven to 350°f
  • Remove dough from fridge and with a cookie scoop or spoon scoop dough onto cookie sheet about 2 inches apart from each other ( I like bigger cookies so I use a med size cookie scoop).
  • Bake for 10-12 mins, remove and let rest on sheet for 2 mins before transferring to cooling rack.

Notes

You can go ahead and make this dough a few days in advance and leave in fridge until ready to use.  You can also freeze dough up to 4 weeks in freezer and make cut out shapes with it as well.  Just remove and place in fridge the night before and then roll out on floured surface and use any cut out shapes you have on hand.  The kids will definitely enjoy this part.
