These leftover Halloween candy cookie bars are loaded with all your favourite candy treats. Perfect for using up all that candy you can’t possibly eat and a perfect fall treat.
So Halloween is definitely an all day event around here, the kids plan get togethers with their friends they get dressed together and eat just before heading out. This year was no different. I love seeing kids in their costumes and it goes without saying I LOVE candy; well most candy. The one time of year where it is no holding back on the candy eating, I mean give me all the TWIX please. Or I can have some self control and just use up this candy and make perfectly chewy, gooey, delicious candy cookie bars.
While the kids are going through their candy I’m actually seeing what I can use to make some sweet treats. Whatever ones they don’t like they put aside for me to use in desserts; they already know mommy needs her chocolate too LOL. The possibilities are endless.
What kind of candy should I use for these Halloween Candy Cookie Bars?
Well any kind of course. This recipe is really adaptable to whatever candy you prefer or have on hand. We had a lot of candy here this year so I used Kit Kat, Snickers, Aero, Hershey Cookies and Cream, Reese’s cups and M&M’s. I mean I could have used more I guess but didn’t want to over do it LOL.
Tips for making these cookie bars:
Use a variety of candy with different textures; crunchy, creamy, caramel; all good.
Do not over mix the batter. For real when you do over mix you build up the gluten which gives you a dry, tough cookie bar. Not good.
Do not over bake you want them to be still gooey in the center to prevent them from drying out. Remember they continue to bake as they cool.

Preheat oven to 350°F and line a 8×8 baking pan with parchment paper and set aside.
In a large bowl whisk together flour, salt and baking soda and set aside.
With mixer mix together the butter and both sugars for about 5 mins.Add the egg and vanilla and mix for another minute.
With mixer on low speed slowly add in your bowl of dry ingredients plus the chocolate chips and candy you are using. Mix until just combined.
Pour batter into prepared pan a bake for 25-30 mins. while center is still a little gooey in middle, don't want to over bake.
Let cool in pan for 10 mins. before transferring to cooling rack. Cool for another 20 mins. before cutting into.

These cookies bars keep well on counter covered for 2 days or in fridge for up to 4 days. You can also cut them and freeze in zip lock bag or airtight container for up to 2 months.This recipe is very adaptable, you may use and candy you like and even add nuts if you like. You can also top off with extra candy pieces before baking and once you remove from oven.Remember key is to not overbake these I usually take them out after 25 mins. of baking for a gooey, chewy bar. Leave in longer it you like more of a crunchy bar.
