Nutella Stuffed Brown Sugar Cookies

A chewy brown sugar cookie stuffed with molten gooey Nutella in every bite. It doesn’t get any better then this.

So if you haven’t guessed it by now cookies are an all time favourite of mine to eat and bake. I try not to eat them all in one sitting though (LOL), so I take one or two tested out the flavour and overall texture and give the rest away. Trust me I need to send them off!

I often do 5-6 bakes a week and of course I have to taste test them and well it can be tough to swallow (if you can imagine) all these sweets after awhile. Well these were no different. These Nutella stuffed cookies were decadent and chewy and gooey and oh so amazing fresh out of the oven. I mean is there anything more luscious then molten Nutella coming out of a cookie; well maybe coming out of a big cookie pie YUM!

These may seem complex but really they are anything but. The only part is you have to wait for the Nutella to freeze up before stuffing inside the cookie, but the cookie base is quite simple.

I did a brown sugar cookie base this time which makes them chewy and once stuffed with Nutella I rolled them in granulated sugar just to make them appealing to the eye.

What you’ll need to make these cookies?

These stuffed cookies come together with ingredients you probably already have in your pantry.

  • Butter-unsalted and melted butter is used here. You can use salted butter just omit the salt from recipe.
  • Brown Sugar- only brown sugar here for a chewy cookie
  • Egg- just one large egg room temp.
  • Vanilla- for flavouring.
  • Baking Powder and Baking Soda- your leavening agents.
  • Salt- to offset sweet.
  • All Purpose Flour- measure by spooning and levelling it off, you don’t want to pack it in it makes for a dense cookie.
  • Nutella- 12, 1 tablespoon dollops place on baking sheets and then frozen for 20 mins.
  • Granulated Sugar- this is optional to roll your cookie dough before baking.

These are by far an absolute treat, imagine making these and eating them, warm and gooey Nutella coming out of every bite. Heaven on a plate if I do say so myself.

Nutella Stuffed Brown Sugar Cookies

Ingredients

  • ½ cup melted unsalted butter
  • ¾ cup brown sugar
  • 1 lrg egg at room temp.
  • ½ tsp vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • cup all purpose flour
  • 12 tbsp of Nutella placed in freezer for 20 mins
  • ¼ cup of granulated sugar

Instructions

  • Scoop out 12, 1 tablespoon size of Nutella and place on a baking sheet on top of parchment paper and place in freezer for about 20 mins.
  • In a bowl whisk together flour, salt, baking soda and baking powder and set aside.
  • With your mixer combine brown sugar and melted butter and mix for about 5 mins on med-high speed.
  • Add in your egg and vanilla mix for another 3 mins.
  • With mixer on low speed add in your dry ingredients and mix until just combined.
  • Place dough in fridge to chill for 10 mins.
  • While dough chilling preheat your oven to 350°F and line two baking sheets with parchment paper and set aside.
  • Now take the Nutella out of freezer and roll them into balls and with your large cookie scoop take some cookie dough flatten it out and place one Nutella ball in the center of dough and wrap dough around Nutella. Do this until all dough and Nutella is used up (about 12 cookies).
  • Now take your granulated sugar and place in a bowl and roll each cookie ball in sugar until covered and place on prepared baking sheet.
  • Place baking sheets in fridge for another 10 mins before baking.
  • Bake for 8-10 mins until edges golden brown. No longer then 10 mins though don't want to over bake them.
  • Remove from oven and let them sit for 5 mins before transferring to cooling rack.

Notes

This recipe makes 12 cookies but can be doubled to make more.
They store well on counter covered for 3 days or in fridge for 5 days in an air tight container.  
They freeze well to for up to 2 months, just remove as many as you need and let them thaw on counter and warm them up in the microwave for a few seconds for melted Nutella center.
