Basic Pie Dough
Hey everyone hope your all having a great day. I am particularly tired today it’s been non-stop around here between testing recipes, taking photos, editing photos, blogging and posting; all while (trying) to keep up with household chores; oh and did I mention the children, they seem to be asking for something every few minutes. I could really use a vacation, it’s been about a year now and I just need to get away from the norm and recharge. Who’s with me…?
With that said I still love what I do, I love baking and experimenting and developing simple and easy recipes, today is no different. I have for you guys just a really simple basic pie dough recipe that can be used with pretty much any pie you like. Me myself I don’t eat a lot of pie but when I do it’s usually pecan or apple. I should really venture out and try new flavours. As I was saying, this is a pretty easy recipe to make just a few ingredients and a food processor. No processor no problem you can use a hand mixer.
Remember
Make sure your your butter and shortening is cold really cold. I recommend measuring them out and place them in freezer for about 5 mins. before starting.
Also the water needs to be ice cold as well and just add a tablespoon at a time, you want dough to be just moist enough that it holds together when you squeeze it.
Finally the dough needs to be chilled for at least an hour before baking. Chilling allows gluten to relax making it easier to roll out and keeps it from shrinking while baking.

Basic Pie Dough
Ingredients
- ½ cup unsalted cold cubed butter
- ¼ cup of cold shortening
- 2 tbsps. of sugar
- 1½ cup of all purpose flour
- ½ tsp of salt
- 2-3 tbsps. of ice cold water
Instructions
- In a food processor add first 5 ingredients and pulse for 10-15 seconds.
- Now with the food processor running add 1 tablespoon at a time of water.When a handful of dough squeezed together holds its shape you've added enough water; if dough crumbles continue to add water 1 tablespoon at a time, checking consistency.
- Turn dough onto clean surface, kneed it, flatten and form into disk. Wrap with plastic wrap and refrigerate for at least an hour before baking.
- Remove from fridge 10 mins. before rolling out to soften a bit, this prevents it from cracking when rolling out.Dust works surface and rolling pin with flour and roll the dough away from you making sure to give it a quarter turn every time. Continue rolling until you get a 9 inch round and 1/8 to 1/4 inch thickness.
- Roll dough onto rolling pin and carefully place and unroll onto pie dish. Gently pat the dough into place and trim off any access dough.Crimp edges all the way around and pierce dough with a fork.
