These easy to make red velvet cookies have crispy edges with a chewy center and loaded with two kinds of chocolate chips. They are bright, colourful, delish and perfect for anytime of the year.

Valentine’s Day is just around the corner, how do you guys celebrate. We don’t go crazy around here with it, maybe some crafts with the kids and of course baking but my husband and I normally don’t go out and celebrate. We actually prefer staying home with the kids and having an over the top dinner. I love cooking and baking and when it’s a special occasion even better; I try to make it special for everyone. The kids will help out as well and we just have fun in the kitchen. This year will be no exception!

So, since I love red velvet cake and of course cookies, naturally I had to merry the two together and create one of my favourite recipes; Red Velvet Cookies.

What Is Red Velvet?

That actually is really hard to pin down, but it’s somewhere between vanilla tasting and rich chocolate, it gets it’s flavour from cocoa powder and vanilla extract.

Of course the red colour comes from red gel food colouring. A few drops gives it the bright red you’ll need to make these.

Ingredients in Red Velvet Cookies

These from-scratch cookies have the same ingredients your typical chocolate chip cookie has;

  • Butter
  • Brown Sugar
  • White Sugar
  • Eggs
  • Vanilla
  • Salt
  • Baking Soda
  • Flour

What makes them red velvet is the addition of red gel food colouring and unsweetened cocoa powder; gives them that deep red velvet colour.

What Kind Of Chocolate Chips Can I Use?

So this recipe is loaded with both semi-sweet and white chocolate chips, both go great with red velvet. You can however, omit one or the other or even replace with chocolate chunks. Milk chocolate will be sweeter and they don’t seem to melt as well as semi-sweet but that’s an option too. Either way DELISH!

Red Velvet Cookies

These red velvet cookies are soft, chewy, bright and loaded with two kinds of chocolate chips. If you love all things red velvet you'll love these.

Ingredients

  • 1 cup of melted unsalted butter
  • 1 cup of brown sugar
  • ¾ cup of granulated sugar
  • 2 large eggs at room temp.
  • 1 tsp of vanilla extract
  • 1 tbsp of red gel food colouring
  • 1 tsp of salt
  • 1 tsp of baking soda
  • 2 cups of All-purpose flour
  • ¾ cup of cocoa powder
  • 1 cup of semi-sweet chocolate chips
  • 1 cup of mini white chocolate chips

Instructions

  • Preheat your oven to 350°F and line 2 baking sheets with parchment paper and set aside.
  • In a large bowl whisk your flour, cocoa powder, salt and baking soda and set aside.
  • With mixer on med-high speed mix your butter and both sugars for about 5 mins.
  • Add in the eggs and vanilla and mix for another 2-3 mins.
    Then add in your food colouring and mix again.
  • Finally with mixer on low add in the dry ingredients and the chocolate chips and mix until just combined.
  • With large cookie scoop, scoop dough onto baking sheets and top with extra chocolate chips if you'd like.
    Bake for 8-10 mins. until edges just set.
  • Let them set on baking sheet for about 5 mins before transferring to cool rack.

Notes

These cookies keep well covered at room temperature for 3 days or covered in fridge for up to a week.
You can also freeze these for up to 2 months.
Once baked you can add more chocolate chips on top if you’d like. 
Remember not to overbake these they continue to bake with residual heat as they cool.  
I usually take them out at 8 mins. for a more gooey cookie, but if you prefer more baked take them out at 10 mins.  no longer then that.
