Hey everyone hope your day is going well; it’s a hot one here today so I may take a dip in the pool or even just lounge once I’m done blogging for the day. So I’ve been picking my brain and going through the pantry seeing what I have to come up with a sweet treat. There’s lots of sprinkles and of course there’s always chocolate and I also saw a boxed brownie mix my kids asked for and that gave me an idea to make blondies, yes not brownies but blondies.
Blondies are a crowd pleaser and easy to make they come together in know time at all. Don’t get me wrong I love me a good brownie but wanted to change it up today so came up with these White Chocolate Chip Funfetti Blondies and let me tell you they will not disappoint. They are chewy and moist and almost fudge like which I love. The sprinkles makes them fun and whimsical and just so it’s not always semi-sweet chocolate I added white chocolate instead but they will be just as good with semi-sweet chocolate chips.
Blondies in itself are very versatile and I’m sure I’ll be posting more about them in the future but for now these are a good start and a must try. These blondies are chewy and loaded with white chocolate chips and sprinkles

Ingredients
½cupof soften unsalted butter
¼cupof vegetable or canola oil
¾cupof brown sugar
½cupof granulated sugar
2lrgeggs room temp.
½tspof vanilla extract
1tspof salt
½tspof baking soda
1cupof All Purpose flour
½cupof sprinkles
1cup mini white chocolate chipsplus a few extra to top off before baking
Instructions
Preheat oven to 350°F and line a 8×8 or 9×9 square pan with parchment paper; set aside
With stand mixer and paddle attachment cream together butter, oil and both sugars for 5 mins.
Scrape down the bowl and add eggs and vanilla and mix another minute.
Add baking soda, salt and flour and mix on low until just combined.
Add sprinkles and white chocolate chips and mix for just about 10 seconds, you don't want to overmix batter.
Spread batter evenly onto prepared pan and top with a few more chocolate chips if you like then bake for 25-30 mins.
Remove from oven and let cool for 10 mins. before removing from pan to completely cool.
Notes
These are best at room temp. same day but can be stored in air tight container in fridge for up to 2 days. If baking in 8×8 pan they will be a thicker bar and just add an extra minute or two to bake time and if you are using 9×9 pan they will be thinner and I recommend taking them out after 25 mins. Remember they continue to bake with heat of pan so you don’t want to over bake themDon’t like white chocolate no problem for ahead and use semi-sweet they will be just as good.
