Chewy Turtles Cookies

I knew when making these they would be a new favourite of mine and I was right. Take rich chocolate cookies and fill them with chocolate chips, pecans and caramel bits, I mean how could it not be a HIT. It’s a turtles chocolate lovers DREAM.

Well guys I did it again; these are truly an ultimate mash up of two favourites; cookeis and turtles chocolalte, making one decadently delicious treat. I don’t know about you guys but I love Turtles Chocolate, I mean you have caramel and crunchy pecans covered in milk chocolate what’s not to love. So as a baker the logical thing to do was to make it into a cookie and boy am I glad I did.

Chocolate Base

So I kept going back and fourth about which cookie base to use regular or chocolate, I love them both but I ultimately wanted to switch it up and went with my chocolate cookie base and am I glad I did. These turned out perfect I mean look at them. A chocolate lovers dream, rich chocolate cookie packed with all the turtle components. These did not disappoint.

Ingredients Needed

  • Butter- melted and unsalted.
  • Brown Sugar- for moisture and chewy texture.
  • White Sugar- for crispy edges.
  • Vanilla Extract- for flavour.
  • Eggs- two here for binding.
  • Salt- to offset the sweetness.
  • Baking Soda- helps to leaven.
  • Cocoa Powder- to make chocolate base cookie and intense chocolate flavour.
  • All Purpose Flour- builds structure in cookies.
  • Chocolate Chips- this recipe has both semi-sweet and milk chocolate chips.
  • Pecans- can’t have turtles without them, but can substitute walnuts too.
  • Caramel- I used Kraft caramel bits in this recipe, so creamy.

Tips For Making Turtles Cookies

  • Properly measure your flour and cocoa powder, scoop it and level it off by sweeping a knife over top.
  • Make sure butter is melted but not HOT.
  • Use room temperature eggs.
  • Use a a scoop to make them uniform in size.
  • Add extra pieces of chocolate, pecans or caramel pieces on the scooped balls before baking, you can even add after they come out too.
  • Bang the sheet on the counter a few times after removing from oven to flatten out cookies a bit.
  • No need to chill this dough.
  • These bake for 10-12 mins. but for a gooey cookie take them out at the 10 minute mark, they continue to bake while cooling but won’t be over baked.

That’s pretty much it guys. These were a HUGE hit with the kiddos and me, I had to eventually GIVE them away to neighbours, they were hard to resist. Can you blame me look at them, chocolatey, caramelly (is that a word..?) and chewy, SOOOOOO good.

With that said I hope you guys take some time to try this recipe out cause believe me it will be worth it. I know I will be making these over the holidays; if I can wait that long.

Chewy Turtles Cookies

Ingredients

  • 1 cup of melted unsalted butter
  • 1 cup of brown sugar
  • ¼ cup of granulated sugar
  • 2 large eggs at room temp.
  • 1 tsp of vanilla extract
  • 1 tsp of salt
  • 1 tsp of baking soda
  • 2 cups of all purpose flour
  • ½ cup of cocoa powder
  • ½ cup of semi-sweet chocolate chips plus extra to place on top of scooped dough
  • ½ cup of milk chocolate chips plus extra to place on top of scooped dough
  • ½ cup of pecan pieces
  • ½ cup of caramel bits

Instructions

  • Preheat oven to 350°F and line two baking sheets with parchment paper. Set aside
  • In a large bowl add the flour, cocoa powder, baking soda and salt. Whisk and set aside.
  • With stand mixer on low mix together butter and both sugars for about 5 mins.
  • Add both eggs and vanilla and mix again.
  • With mixer on low add your bowl of dry ingredients as well as both chocolate chips, pecans and caramel bits. Mix until just combined.
  • With large cookie scoop or spoon scoop out dough and place on baking sheets. At this point you can add more chocolate chips on top of dough before baking.
  • Place in oven and bake for 10-12 mins. Remove and let cool on sheet for about 5 mins. before transferring to a cooling rack.

Notes

These cookies keep well on counter covered for up to 2 days or in fridge for 5 days.  They freeze well too in air tight container or zip lock for up to 2 months.
You may omit the pecans if you like or even switch and add walnuts.  Just as good.
Once you remove from the oven you can bang the cookie sheet on the counter a few times for a slightly flatter cookie.  Also add some more chocolate chips when you remove from the oven for an extra gooey treat.
