Ingredients
1cupof melted unsalted butter
1cup of brown sugar
¼cup of granulated sugar
2large eggs at room temp.
1tspof vanilla extract
1tspof salt
1tsp of baking soda
2cupsof all purpose flour
½cupof cocoa powder
½cupof semi-sweet chocolate chipsplus extra to place on top of scooped dough
½cupof milk chocolate chipsplus extra to place on top of scooped dough
½cupof pecan pieces
½cupof caramel bits
Instructions
Preheat oven to 350°F and line two baking sheets with parchment paper. Set aside
In a large bowl add the flour, cocoa powder, baking soda and salt. Whisk and set aside.
With stand mixer on low mix together butter and both sugars for about 5 mins.
Add both eggs and vanilla and mix again.
With mixer on low add your bowl of dry ingredients as well as both chocolate chips, pecans and caramel bits. Mix until just combined.
With large cookie scoop or spoon scoop out dough and place on baking sheets. At this point you can add more chocolate chips on top of dough before baking.
Place in oven and bake for 10-12 mins. Remove and let cool on sheet for about 5 mins. before transferring to a cooling rack.
Notes
These cookies keep well on counter covered for up to 2 days or in fridge for 5 days. They freeze well too in air tight container or zip lock for up to 2 months.You may omit the pecans if you like or even switch and add walnuts. Just as good.Once you remove from the oven you can bang the cookie sheet on the counter a few times for a slightly flatter cookie. Also add some more chocolate chips when you remove from the oven for an extra gooey treat.
