Chewy Flourless Peanut Butter Chocolate Chip Cookies

With just 5 (maybe 6) ingredients these chewy cookies come together in no time. They are gluten free and really they can be prepared with any nut/seed butter of your choosing. Add in your favourite candy, nut or raisins and you have yourself a real treat anyone will enjoy.

So today’s post is an all time favourite of mine not just because they are so good but they are super easy to make as well, Chewy Flourless Peanut Butter Cookies. These cookies are gluten free and they are still chewy and gooey with the addition of chocolate chips (I need my chocolate). These are seriously an EPIC treat.

Now for those who don’t like peanut butter you can definitely use other nut butters or even seed butter, but I’m partial to peanut butter. However I don’t recommend using natural peanut butter it will cause them to spread more and have a crispier texture; it has to be a Jiff style or Kraft peanut butter.

Did I mention no mixer required, just put everything in one bowl and mix. No tricks, nothing fancy, it really is that simple. Just remember not to over bake these you want them to be soft and chewy not hard and crumbly.

Chewy Flourless Peanut Butter Chocolate Chip Cookies

Ingredients

  • 1 cup of smooth peanut butter can use crunchy if you prefer
  • ¾ cup of brown sugar
  • 1 tsp of vanilla extract
  • 1 egg (room temp)
  • ½ tsp of salt
  • ½ tsp of baking soda
  • ¾ cup of chocolate chips

Instructions

  • Preheat oven to 350°F
  • Add all ingredients to a bowl and mix until combined. Fold in the chocolate chips.
  • With a cookie scoop place them on a cookie sheet about 2 inches apart. I used a large scoop.
  • Bake for 10-12 mins, remove from oven and let them rest on sheet for 5 mins to set before transferring to cooling rack.

Notes

You can definitely prepare this ahead of time and store dough in the fridge just take them out 30 before baking them.
These cookies store well in fridge for up to a week in container or in the freezer for up to 4 weeks.  I don’t like to leave them too long in the freezer they will lose their flavour. 
Don’t over bake you want them soft and chewy trust me.  I usually take them out at 10 mins.
