Chocolate Chip Snowball Cookies

Snowball Cookies or Russian Tea Cakes? Whatever they may be they are one of my favourite Christmas cookies; and of course I had to add chocolate to them.

Normally these cookies have chopped nuts in them but I decided to go the other route and switch it up and add mini chocolate chips. Chocolate makes everything better if you ask me. These are one of my most requested cookies to bake for this time of year and if you guys make them you will surely see why.

Do you guys have a list a cookies that you make for Christmas and there’s that one that has to be made every year. Well these snowball cookies are it for me. There are so soft and buttery and not to much tender they for real just melt in your mouth. I can’t keep enough of these in the house, I mean my daughter alone will devour these all if I let her.

Nut Free Snowball Cookies

As I had mentioned these cookies are usually made with either chopped pecans or walnuts but you know me I love chocolate so I essentially added mini chocolate chips. They are a nut free version of the original and I must say I think they are better; but that’s just me you be the judge.

What is a Snowball Cookie?

This bite size cookies are a buttery shortbread-like cookie. They are made with a few ingredients and they come together in no time at all. What makes them look like snowballs is rolling them into powdered sugar.

The typical ingredients found in these cookies are;

Butter, Powdered Sugar, Salt, Vanilla and Flour.

I broke away from tradition and added mini chocolate chips rather than the chopped nuts.

Making these Snowball Cookies

These cookies come together in no time at all you mix butter and sugar first for about 2 mins and then add the rest of the ingredients. Mix until dough comes together and you have a nice thick cookie dough.

Then for size I use a small 1 tablespoon ice cream scoop roll them into balls and place them on parchment line baking sheets. They bake up in about 10 mins and that’s all folks. Let them cool for a bit before rolling them in the powdered sugar and enjoy. They are a soft, buttery melt in your mouth treat that will have you coming back for more.

Can I Make These in Advance?

Yes, yes and yes. These can definitely be made in advance and frozen for up to one month. The only thing I would suggest is not rolling them in the sugar before freezing. Freeze them as is thaw them and then roll them in the powdered sugar.

These soft, buttery melt in your mouth cookies come together so easily you'll be making them over and over again

Ingredients

  • 1 cup of soften unsalted butter
  • ½ cup of powdered sugar
  • ¼ tsp of salt
  • tsp of vanilla extract
  • cups of All Purpose Flour
  • 1 cup of mini chocolate chips
  • 1 cup of powdered sugar for dusting

Instructions

  • Preheat oven to 350°F and line two baking sheets with parchment paper and set aside.
  • In a mixer cream butter and powdered sugar for about 2-3 mins.
  • Add the vanilla and mix. Then with mixer on low add the flour and chocolate chips and mix until just combined.
  • With a small ice cream scoop, scoop out dough and roll into balls. It's about 1 tbsp of dough.
  • Bake on lined baking sheets for 10 mins.
  • Once you take them out let them cool for a minute and place in a bowl with the powdered sugar and cover with sugar all over.
  • Transfer to cooling rack to continue cooling.

Notes

These keep fresh for up to 3 days on counter in and airtight container or in fridge for up to 5 days.  
You can also freeze these in an airtight container for up to 4 weeks just be sure not to dust them with the powdered sugar.  Take them out and once they are at room temp dust them with the powdered sugar.
You don’t want to over bake them 10 mins is exact time to bake you want them to be soft and melt in your mouth.
