Easy Pumpkin Spice Bread

My Easy Pumpkin Bread recipe is a favourite fall dessert around here. It’s moist and packed with pumpkin flavour and a great way to use up any leftover canned pumpkin. It’s great for breakfast or snack.

It’s no surprise that I love love love to bake and try new recipes out, and when the seasons change I use what’s available to that season. So during the fall season I will use apples and pumpkins in my recipes and this one is a favourite of mine. It’s pretty easy and straight forward, it turns out great every time. It’s moist and deliciously full of pumpkin flavour.

Ingredients In Pumpkin Spice Bread

This recipe is SO easy that you don’t even need a mixer for this, one bowl and spoon will do.

For this easy pumpkin spice bread you need:

  • Oil- I use vegetable here but canola will do as well.
  • Sugar- Just granulated white sugar here.
  • Eggs- Two large eggs at room temp.
  • Canned Pumpkin- Well of course any canned pumpkin you like will do, as long as it’s 100% pumpkin.
  • Vanilla Extract- Always a dash for flavour.
  • Baking Soda & Baking Powder- Helps give bread it’s rise.
  • Salt-to offset sweet.
  • Pumpkin Pie Spice- If you don’t have this just add cinnamon, nutmeg, all spice, ginger and cloves to make your own blend.
  • Flour- I always use all-purpose but you can use 1:1 Gluten Free All Purpose.

What size pan do I use?

This recipe uses a 9×5 loaf pan but an 8×4 will work too.

How do I store pumpkin bread?

This bread keeps well covered on counter for 2 days or in fridge for up to 4 days. You can also freeze it, just wrap the entire bread in plastic wrap and freeze or wrap individual slices and take out how ever many you need. Defrost overnight in fridge.

Why is it dry?

The key is to not over bake it, remember it continues to bake while cooling so you take it out when toothpick insert is a little wet with few crumbs on it.

Ingredients

  • 1 cup of vegetable oil
  • 1 cup of granulated sugar
  • 2 large eggs at room temp.
  • 1 cup of pumpkin puree
  • 1 tsp vanilla extract
  • 1 tsp of salt
  • tsp of pumpkin spice
  • 1 tsp of baking powder
  • ½ tsp of baking soda
  • 2 cups of All Purpose Flour

Instructions

  • Preheat your oven to 375°F and line a 9×5 loaf pan with parchment paper, spray with cooking spray and set aside.
  • In a large bowl add your flour, baking powder, baking soda, salt and pumpkin spice. Whisk together and set aside.
  • With your stand mixer or hand held mixer, mix the oil and sugar together for a few minutes until well incorporated.
  • Add your eggs, vanilla and pumpkin puree and mix well for another minute.
  • With mixer on low speed take your bowl of dry ingredients and slowly add it into wet batter and mix until just combined making sure not to over mix.
  • Pour mixture into prepared loaf pan and spread evenly.
    Place in the oven and bake for 45-55 mins. until inserted toothpick has a few crumbs on it. Remember it continues to cook as it cools so you don't want to over bake it.
  • Let it cool in pan for 10 mins. before transferring it to cooling rack. Let cool for another 15-20 mins. before cutting into.

Notes

This loaf keeps well on counter in airtight container for 2 days or in the fridge for up to 4 days.  It also freezes well, wrap the entire loaf in plastic or wrap individual slices and take out what you need.  Defrost overnight in fridge.  
You can easily add mix-ins  to this recipe, such as 1 cup of your favourite nut or 1 cup of chocolate chips.
