Preheat your oven to 375°F and line a 9x5 loaf pan with parchment paper, spray with cooking spray and set aside.
In a large bowl add your flour, baking powder, baking soda, salt and pumpkin spice. Whisk together and set aside.
With your stand mixer or hand held mixer, mix the oil and sugar together for a few minutes until well incorporated.
Add your eggs, vanilla and pumpkin puree and mix well for another minute.
With mixer on low speed take your bowl of dry ingredients and slowly add it into wet batter and mix until just combined making sure not to over mix.
Pour mixture into prepared loaf pan and spread evenly.Place in the oven and bake for 45-55 mins. until inserted toothpick has a few crumbs on it. Remember it continues to cook as it cools so you don't want to over bake it. Let it cool in pan for 10 mins. before transferring it to cooling rack. Let cool for another 15-20 mins. before cutting into.
