Ingredients: 1 cup of melted unsalted butter; 1¼ cup of brown sugar; ½ cup of granulated sugar; 2 large eggs (at room temp.); 1 tsp of vanilla extract; 1 tsp of salt; 1 tsp of baking soda; 2½ cups of all purpose flour; 1 cup of crushed graham cracker pieces; 1 cup of semi-sweet chocolate chips; ¾ cup of Hershey's Milk Chocolate pieces (plus more to place on top of scooped dough); 1 cup of small or mini marshmallows (plus extra to place on top of scooped dough)

Did someone say S’mores! These s’mores cookies have it all; chewy, buttery texture loaded with chocolate, graham crackers and marshmallows. Um drooling! This easy recipe is a perfect spin on a classic summer treat.

With summer just around the corner I’m starting off with a bang with these S’mores cookies. Honestly is there anything better than roasted marshmallows and melted chocolate sandwiched between graham crackers; the thought of it just takes me back to those campfire days, and this recipe will do just that.

What are S’mores Cookies?

These s’mores cookies are made with my go to chocolate chip cookie recipe. I simply add in graham cracker crumbs, some marshmallows, Hershey chocolate pieces and viola.

You end up with the gooiest, chewiest, most delicious cookie.

I guarantee you’ll be coming back for seconds (maybe even thirds).

Ingredients to make S’mores Cookies

First of all you’ll need all the basics for a chewy chocolate chip cookie:

unsalted Butter
brown and white Sugar
eggs
vanilla
salt
baking soda
flour
chocolate chips

You’ll then just need to add:

Hershey’s chocolate
graham crackers
marshmallows

All these goodies added to the dough make for one heavenly combination and the perfect s’mores cookie.

Do I Need To Chill The Dough

No, you do not need to chill the dough, just scoop it out and bake. You can chill for 10 mins. prior to baking if you prefer they just won’t spread out as much.

Expert Tips For Baking These Cookies

If you want ooey-gooey cookies do not bake for more then 9 mins., this is crucial because they will firm up as they cool so you don’t want to over bake them.

To make these even more enticing go ahead and add some additional chocolate and marshmallow pieces once you take them out of the oven. That chocolate will melt and collect pools of chocolate on top of the cookie, making these OH SO decadent.

I used semi-sweet chocolate chips and Hershey’s chocolate but you can go ahead and use whichever chocolate you prefer or have on hand. With that said, stick with the basics when it comes s’mores, you want that authentic s’mores flavour.

That’s pretty much it nothing to crazy here just a few add ins to make the ultimate s’mores cookies. It’s a quick and easy recipe that will have you coming back for more and more and more.

Ingredients

1 cup of melted unsalted butter
1¼ cup of brown sugar
½ cup of granulated sugar
2 large eggs at room temp.
1 tsp of vanilla extract
1 tsp of salt
1 tsp of baking soda
2½ cups of all purpose flour
1 cup of crushed graham cracker pieces
1 cup of semi-sweet chocolate chips
¾ cup of Hershey's Milk Chocolate pieces plus more to place on top of scooped dough
1 cup of small or mini marshmallows plus extra to place on top of scooped dough

Instructions

Prepare two baking sheets with parchment paper and set aside. Preheat oven to 350°F.
In a large bowl whisk your flour, salt and baking soda and set aside.
With mixer, mix melted butter and both sugars for about 5 mins, until well incorporated and lighter in colour.
Add your eggs and vanilla and mix for another 2-3 mins.
Take your bowl of dry ingredients and crushed graham crackers and mix until just combined.
Add your chocolate and marshmallows and mix until combined.
With a large scoop, scoop out dough and place onto prepared baking sheets and top with extra chocolate and marshmallows if you like.
Bake for 8-10 mins until edges golden brown.
Let rest on cookie sheets for a few minutes before transferring to cooling rack.

Notes

These keep well covered at room temperature for 3 days or in the fridge for up to a week.

If stored in fridge warm them up in the microwave for a few seconds.

Be sure not to over bake these they continue to bake as they cool.

To make them extra enticing add some additional marshmallows and chocolate pieces when you take them out of the oven.
