Best S'mores Cookies

Did someone say S'mores; these cookies will take you back to those campfire days. Loads of chocolate, graham crackers and marshmallows. Um drooling! This easy recipe is the perfect spin on a classic summer treat.

Ingredients

  • 1 cup of melted unsalted butter
  • cup of brown sugar
  • ½ cup of granulated sugar
  • 2 large eggs at room temp.
  • 1 tsp of vanilla extract
  • 1 tsp of salt
  • 1 tsp of baking soda
  • cups of all purpose flour
  • 1 cup of crushed graham cracker pieces
  • 1 cup of semi-sweet chocolate chips
  • ¾ cup of Hershey's Milk Chocolate pieces plus more to place on top of scooped dough
  • 1 cup of small or mini marshmallows plus extra to place on top of scooped dough

Instructions

  • Prepare two baking sheets with parchment paper and set aside. Preheat oven to 350°F.
  • In a large bowl whisk your flour, salt and baking soda and set aside.
  • With mixer, mix melted butter and both sugars for about 5 mins, until well incorporated and lighter in colour.
  • Add your eggs and vanilla and mix for another 2-3 mins.
  • Take your bowl of dry ingredients and crushed graham crackers and mix until just combined.
  • Add your chocolate and marshmallows and mix until combined.
  • With a large scoop, scoop out dough and place onto prepared baking sheets and top with extra chocolate and marshmallows if you like.
  • Bake for 8-10 mins until edges golden brown.
  • Let rest on cookie sheets for a few minutes before transferring to cooling rack.

Notes

These keep well covered at room temperature for 3 days or in the fridge for up to a week.  
If stored in fridge warm them up in the microwave for a few seconds.
Be sure not to over bake these they continue to bake as they cool.
To make them extra enticing add some additional marshmallows and chocolate pieces when you take them out of the oven.
