White Chocolate Biscoff Cookies

Big soft and chewy biscoff cookies with white chocolate chips and biscoff pieces throughout

Hello friends hope you’re all having a marvelous day. This day did present itself with a few challenges in our morning routine but nothing we couldn’t handle and now were back on track.

So let’s talk cookies, I love all things cookie and of course my favourite is the chocolate chip but I decided to give my go to cookie recipe a tweak with a new flavour in the mix…., BISCOFF. That’s right I added the famous spread to the dough.

These big chewy and soft cookies have Biscoff flavour throughout with white chocolate chips and a slight crunch with the addition of Biscoff cookies pieces as well. I just made a couple of easy adjustments to my chocolate chip recipe to get that big flavour in these cookies.

You can find Biscoff or any cookie spread at just about any grocery store next to the peanut butter. Grab a jar and get to it; warning you may end up eating the rest with a spoon, trust me I have. However, the Biscoff spread wasn’t enough to get that big flavour so I added Biscoff cookies as well. I roughly crushed up a few pieces into the dough and that really seemed to do the trick. As always I add a few more chocolate chips on top of scooped out dough before baking.

Biscoff Chcolate Chip Cookie Bars

Ingredients

  • ½ cup of melted (not hot) unsalted butter
  • ¾ cup of brown sugar packed
  • ¼ cup of granulated sugar
  • 1 lrg egg at room temp.
  • 1 tsp of vanilla extract
  • 1 tsp of baking soda
  • 1 tsp of salt
  • 1 cup of crushed Biscoff cookies pieces you can add some additional pieces on top before baking
  • cup of Biscoff cookie butter any cookie butter will do
  • 1 cup of semi-sweet chocolate chips have a few extras to garnish the tops before baking
  • 2 cups of all purpose flour

Instructions

  • Prep an 8×8 or 9×9 square baking pan lined with parchment paper and set aside
  • Preheat oven to 350°F
  • In a bowl whisk flour, salt and baking soda and set aside
  • In a stand mixer with paddle attachment on med-high speed mix together the butter and both sugars for about 5 mins.
  • Add egg and vanilla and mix for another minute.
  • Add your flour mixture on low speed and mix until just combined
  • Finally fold in chocolate chips and Biscoff cookie pieces
  • Grab your prepared dough and press dough in pan
  • Spoon cookie butter onto dough and swirl around with a knife
  • At this time you can top off with extra chocolate chips and Biscoff pieces before baking.
  • Bake for 20-25 mins, until edges golden brown and just a little soft in middle it will continue to bake and set while cooling.
  • Let rest in pan for 10-15 mins before transferring it to cooling rack to continue to cool.

Notes

These keep well covered on counter for 3 days or in the fridge for a week.
You can also slice and freeze for up to 2 months.  Just place in fridge over night to thaw and warm for a few seconds in microwave if you prefer.
